Wholemeal sugar free blueberry pies
8 03 2008I was experimenting in the kitchen trying to find healthier ways to make sweet fruit pies!I used wholemeal pastry flour, replaced sugar with agave syrup and I reduced the fat by blending 1/2cup of unsweetened applesauce with 1/2 cup of margarine(vegan butter) for making the ‘crust’(instead of using 1 cup margarine). Of course by reducing the fat content the texture changes, and its not flaky, but rather like a soft bake. But I still enjoyed it! Its nice for breakfast or for a healthier snack. So, here it is :
You need :
2 1/4 cups wholemeal PASTRY flour (dont use bread flour,because its quite hard for a pie)
1/2 cup margarine
1/2 cup unsweetened applesauce
1/2 cup agave syrup
3 tsp apple sweetener ( I use DolceDi)
1 cup fresh blueberries
1tsp salt
3 tsp cornflour
Some drops of lemon juice
First blend together in your food processor marg with applesauce to create a paste. Add flour, salt and 1 tsp of apple sweetener. Knead with your hands for2-3 minutes. The dough should not be sticky but moist and oily. Shape it in one big ball and put it in the fridge to rest while you will be preparing the filling.(the dough needs to rest. I’m serious.) In a saucepan add blueberries,agave syrup, 2tsp of apple sweetener and some drops of lemon juice according to you taste.( I put 3-4 drops as i squeeze the lemon with my hand on the saucepan). Dissolve cornflour in 3 tbsp of water and when the syrup starts simmering pour it in the saucepan stirring continuously until the sauce thickens. Remove from heat.
Now its time to take the dough out of the fridge and start rolling!! Take a batch of dough on your hand press it down on a clean surface and roll it out as thin as you can. Cut a rectangle with a knife (approximately10×15cm) and remove the rest of the rolled out dough. Take a tablespoon of the blueberry filling and place on one half of the rectangle. Fold it by lifting the other half of the rectangle over the filling. Now with a fork press all around your pie to seal. Repeat until the dough is finished.
Preheat oven at 190c. Place pies in a baking dish and bake for 35 minutes.
*The pattern you see on the pies in the picture is made with a lattice dough cutter. So if you have one on hand use it on the half of the rectangle before you fold it over the filling.

They look awsome!! And I love the fact that they are sugar free!!
