
Spanakopita is a greek traditional spinach pie. The original recipe uses eggs and feta cheese. I made this pie with egg sub and vegan feta ‘cheese’ which I bought. But you can also make this with tofu based homemade ‘feta cheese’. It turned out really yummy and crispy!! So here it is :
You need :
5 cups spinach, rinsed and dried ( leave it for and hour or two your strainer so most of the water goes away)
3 onions chopped
3 egg sub powder mixed with water (as instructed by the brand you use)
a handful of fresh chopped parsley
a handful of fresh chopped dill
3 cloves of garlic, crushed
3 leeks chopped
1 tsp salt
Pam olive oil spray or 3 tsp olive oil
1 tsp veggie seasoning
1 cup crumbled vegan feta(or tofu marinated with lemon zest,herbs and nutritional yeast) -store bought or homemade (optional, but really adds to the taste)
10 thin phyllo pastry dough sheets
Ok so in a pan saute onions and garlic with olive oil until brown, then add spinach, dill, parsley, leek, salt and veggie seasoning. Cook for 10-15 min until spinach leaves are soft. Remove from heat, let cool for ten minutes. Add crumbled ‘feta cheese’ and egg substitute. Mix all together.
Preheat oven at 180c.Spray with oil a 9×9 inch baking dish and lay on it a pastry sheet.
Spray (or brush LIGHTLY) with oil and lay one more sheet on top of it. Repeat 2 more times ( 4 pastry sheets total).
Now add the spinach filling you just made.
The pastry sheets will overlap, so just fold them like that :

Cover with one pastry sheet, spray with oil and repeat until you make 4 layers. Spray with oil also the top sheet and roll and tuck in the sides all the pastry edges like this:


Dont forget to cut your pie into 3″x 3″ pieces with a knife before you bake it so you dont make a mess when you try to cut the pie afterwards. Place in preheated oven and bake for 30 min.
