SugarFree FatFree Apple Pie

Sounds too good to be true…I know, I know. When a recipe calls for sugar and fat I try to see what I can do to avoid it and make a healthier version of it…But sometimes sugar and fat is the only way to make some things what they are, like crispy cookies!But when you can make a healthier version that still tastes great, why wouldnt you prefer it??So here is an alternative to apple pie I came up with. Instead of a pie crust made out of margarine and flour, I used phyllo pastry that is used in some Greek baked sweets or in spinach pies.(its just water and flour)And the sugar replacement is of course my favorite natural sweetener, agave syrup.
4 apples peeled and cubed
1/4 cup + 2tbsp agavesyrup
1 tsp cinnamon
1 tsp vanilla
8 phyllo pastry sheets
Canola oil spray
Now if you want you can add to this nuts, raisins or anything you want!I like simple things..

Mix agave with vanilla and cinnamon and then pour in the bowl where you have your cubed apple pieces. Stir for 1-2 minutes until all apple pieces are covered with agave mixture. Now spray a baking dish with some canola oil and lay the first phyllo sheet. Spray again with oil the surface of the sheet and place another one on top. Repeat until you put half of the phyllo sheets(4).

Pour the filling in and cover with the rest 4 sheets of phyllo sheets spraying with oil in between like you did on the first 4. Cut the pie in rectangle pieces before you bake it!!

Bake at 180c for 40 minutes. The last 15 minutes place the baking dish on the bottom of the oven to caramelized the excess syrup in the pie!! Serve warm, maybe with some warm soy creamer??Enjoy!
