I love mushrooms. Especially portobello mushrooms. Big portobello mushrooms! Grilled…and marinated…mmm. So this is a very easy and DELICIOUS recipe to cook. Its my favourite since I became vegetarian and I actually eat this veeery often.Too often. And I dont know why I havent posted this until now..But here it is!
These mushrooms are very tasty and I like to eat them plain, like a steak, but they are also AMAZING as a burger pattie. Now I made a burger with wholemeal pitta, tomatoes and onions to put my mushroom patty in.
So first you need to make a marinade with: ( for 4-6 portobellos)
-juice of a lemon
-2 tbsp balsamic vinegar
-1/4 cup soy sauce
-1 tsp garlic powder
-1 tsp onion powder
-2-3 drops liquid smoke flavor (optional)

Wash mushrooms and chop off the stems. Place them in a baking dish with the caps of the mushrooms facing you. With a silicone brush, brush mushroom caps with marinade. Now turn the mushrooms upside down and pour the marinade over the mushrooms ( its important to pour the marinade on the inside of the mushroom caps so it captures the flavor. So dont forget to turn them upside down!) Let them marinate in your fridge for at least half an hour. The more,the merrier.
Once they are done marinating, throw them in your grill/toaster and close the top. Cook for 10 minutes or until the mushrooms look cooked but juicy, (not overcooked and dry) and serve them either as a burger patty, or as a steak with some oven fries (mmm) or make a sandwich, the options are endless.
