Banana Rice Pudding

In Greece there is a traditional recipe of rice pudding which is very nice, but contains dairy. I did some research on dairy free rice puddings. Most of them had to much rice for my taste. I like to have a creamy pudding with some rice in it. Not a rice pudding looking all grainy…So at first I wanted to make this with strawberries but I didnt have any, and I wanted to make it NOW so I settled with the very ripe banana sitting on my counter. As I was making this, I realised that corn flour didnt thicken it enough so on the way I decided to use agar flakes. This was the first time that agar flakes worked for me ( I must have been doing something wrong) and I am very pleased with the result! Of course its sugar free, but next time when I will do this with strawberries I will make it with brown rice instead. ( I just didnt have time to boil brown rice)So here it is !!

You need :

-1 1/2 cups soymilk(sugar free)

-1 very ripe banana

-3 tsp cornflour

-1/4 cup basmati rice ( i would even put less)

-1/2 teaspoon cinnamon

-1/4 cup agave nectar

-1/2 tsp vanilla

-2 tsp agar flakes

First boil the rice.(if using basmati cook for 25-30 minutes)Set aside. Now in a blender add banana and agave and mix well, until creamy. In a saucepan add cornflour, vanilla, cinnamon and gradually soymilk, stirring to avoid making lumps. Kepp stirring over medium heat-do not boil. Add cooked rice, keep stirring , same direction always. In another saucepan combine agar flakes with 1/4 cup water and boil until agar COMPLETELY dissolves-very important. Now remove everything from heat and pour agar in your pudding mixture, stirring to distribute agar evenly. Pour mixture in individual pots and set aside to cool for 10min, then refrigerate for 2 hours, or until pudding sets.
