Cookie Yogurt

When I used to eat dairy I had this obsession over a biscuit flavored yogurt. It was amazing. Later I found out it wasn’t even vegetarian because it had gelatin it it and I was very very angry. But determined to make my own. Its just perfect for breakfast and you can add anything you want in it. This is just a base. I used to add rolled oats to the store bought one, but this one is very filling as it is. You can also add fruit.
Make sure you use whole-wheat and sugar free cookies, grain sweetened. This is breakfast, not dessert people![but I am sure some choc chips-or carob you be perfect in this]The ones I use I found them at the health food store and they are sweetened with wheat syrup.

You need :
-400gr unsweetened plain soy yogurt
-10 digestive type whole wheat grain-sweetened cookies[make sure they are vegan, but usually they are]
-21/2 tbsp agave syrup
-1tsp vanilla extract
-1/2 tsp cinnamon
-1tsp rosewater

Place cookies in a blender and crush until they become powdered. Mix with cinnamon an vanilla. Add all ingredients and mix until well combined. Chilll for at least half an hour and enjoy. Makes 2-3 servings.
Note : my cookies were not sweet at all so adjust the agave depending on the sweetness of the cookie you are using.





Apple-Goji Cereal Bars

I dont know if it happens to you, but sometimes I dont have time to make breakfast at all or I want a healthy snack for later on during my day when I am on the go. And yes I do buy energy bars, but its really hard to find one that I like. Most of them are filled with nuts, and sometimes I want something lower-fat. And others have sugar in them, which again is a thing I dont like. So I decided, what a better idea than to make you own adjusted-to-your-taste energy bars from scratch! So I did! These ones are with goji berries, that are like raisins but much healthier, as they are high in protein which is something I need, specially because this bar doesnt have any nuts in it. They other basic ingredient is dried apple crisps, that add a fruity taste and extra crunch! And of course, they are sugar-free!





Matcha Lemonade

Matcha powder is more superior to regular green tea because the whole leaves are grinded in a super fine powder so you actually eat the plant and that gives you a load of vitamin C. Yes more than oranges. And it is also very convenient because you do not have to boil the water first so you can make straight cold tea.This is a very nice refreshing drink with a SHIT LOAD of vitamin C and antioxidants! Its also sugar-free, sweetened with agave syrup. It is the perfect summer drink and super healthy! Not to mention that agave syrup is a perfect match with matcha powder and lemon.
So drink away!





Nata De Coco Fruit Salad

As I was shopping at Wok Shop (Asian grocery store), I noticed a jar with transparent cubes inside, labeled coconut gel (nata de coco). Thinking it was young coconut pulp-or something like that- I bought it. Turns out, it wasnt! haha. So I took one and put it in my mouth. It had a very weird texture. So weird that I couldnt decide if I liked or not. At first it was a it disgusting and thinking it may have gelatin, I spit it out. Then I googled it and found out that nata de coco is fermented young coconut water. Thats how it has this texture. But its not like a jelly. First you think it will be like a jelly but the second you chew on it water starts oozing out of it and its gone!Just like that. After trying it 3-4 cubes, I started liking it. Really liking it! This stuff is addictive..And then I started thinking how good it would be in a fruit salad!

Nata de coco comes from Philippines and is high in dietary fiber, and it has zero fat and cholesterol content. No preservatives or other chemicals are added to it. The only thing I wasnt very excited about, is that in the jar its packed with a syrup that contains sugar, but I just washed the cubes I used under water. Also the nata de coco I bought has a light banana scent which is really nice! This fruit salad I made is more like a fruit ’soup’ because all the fruits are swimming in young coconut water. Its very refreshing and the nata de coco adds a texture kick to it!

You need :

-1 cup fresh strawberries

-1 yellow mango (its the only type of mango I like but feel free to used any kind)

-1 handfull of blueberries

-3 tbsp nata de coco[banana scented] (or more, just dont over do it!)

-300 ml fresh young coconut water (or packaged but try to find unsweetened, except if you dont mind sugar intake)

Wash fruit and nata de coco, cut mango and strawberries in bite sized pieces, add everything together in a bowl and pour over it coconut water. Of course you can substitute all the fruits with what you have on hand and add nata de coco and young coconut water. This makes 2 servings and its a great breakfast along with some soy yogurt!





Blueberry Hill Smoothie

Berries are my favorite fruits…Strawberries, blackberries, blueberries. cranberries, mulberries…I could go on and on. But anyway, this is the smoothie I made this morning!

You need :

- 1 banana

-2 apples juiced ( if you dont have a juicer use store bought organic applejuice )

-10 strawberries

-10 blackberries

-a handful of blueberries

-3 tbsp soy yogurt

-some ice cubes (4-5)

Blend everything together, add some ice, blend again and serve!Makes two servings.
